1 cup chopped pineapple
2/3 cup loosely crushed macadamia nuts
Whipped Cream Layer
1 1/2 cups of heavy cream
Sugar to taste
4 tablespoons of white rum
Toasted Coconut topping
1 ½ cup of coconut toasted over medium heat.
Crush the biscuits with the sugar and combine with the melted butter. Pack a thin layer of ginger snap crust into the base of a 6-inch spring form pan. Place a good portion of ice cream mixed with the pineapples and the nuts on the top; let it freeze until it is hard.
Pack another layer of ginger snap crust on top of the ice cream. Whip the sugar cream and rum to taste and cover the biscuit layer. Freeze preferably overnight.
Release cake from the pan and frost the entire cake with a layer of the sweetened whipped cream. Top with toasted coconut. Put back in the freezer until outside layer of whipped cream is set.
