Recipes

Rich Italian Fruitcake

Ingredients

3 cups dried figs and dates mixed dates

1/2 cup white seedless raisins

1/3 cup dried apricots

1/3 cup almonds, toasted and finely chopped

1/2 cup cocoa powder

2 1/2 cups soft wholegrain bread crumbs

5 tablespoons olive oil

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon

4 teaspoons honey

Oil and dry breadcrumbs for pan

4 teaspoons pine nuts

1/2 cup walnuts

Method

Soak figs and dates overnight in hot water. The next day, bring them to a gentle boil and lower the heat, simmering gently until very soft. While the figs are cooking, soak the white raisins and dried apricots in hot water.

When softened, drain figs or dates and place in large bowl. Drain other fruit, squeeze out excess water and add. Add remaining ingredients in the list down to the honey. Stir well to as smooth a consistency as possible.

Rub a small springform pan or a layer cake pan with olive oil and sprinkle lightly with dry breadcrumbs, shaking out excess, like you would a flour coating. Spoon in the batter and smooth out. Cover the surface with pine nuts and walnuts or other nuts of your choice and press them lightly into the batter. Bake at 375 degrees F for 30 to 45 minutes, until firm.

Apricot glaze for a 10" cake

1 cup Apricot preserves Heat preserves to boiling, strain. Brush on cake while still hot. Let dry. Glaze will dry to a hard finish in 15 minutes or less.

Almond paste

Ingredients

500g (1lb) almonds

250g (8oz) icing sugar

250g (8oz) caster sugar

2 eggs or 4 yolks

2.5 ml (½ teaspoon) almond essence

5ml lemon Juice

Method

Mix both of the sugars and the almonds together. Beat the eggs or the egg yolks with the lemon juice and the almond essence and add to the almonds and mix to a smooth paste.

Makes 2lb of almond paste sufficient to cover an eight-inch cake

Decorator Icing

Mix confectioners sugar with just enough milk (just the tiniest bit) and food color to make a thick icing. It should be thick, but still able to pipe through a decorator's tip. Too thick: add more milk (a little at a time). Too thin: add more confectioners sugar. Pipe with a decorators bag and tips.

Snow White Butter Cream Recipe

Ingredient for seven cups of icing, but the recipe can safely be doubled or trebled.

Ingredients:

2/3 cup water

4 Tablespoons Meringue Powder

12 cups sifted confectioners' sugar (about 3 lbs.)

1-1/4 cups shortening

3/4 teaspoon salt

3/4 teaspoon No Color Almond Extract

3/4 teaspoon Clear Vanilla Extract

1/2 teaspoon No Color Butter Flavor

Combine water and meringue powder and whip with an electric beater at high speed until peaks form. Add 4 cups of sugar, one cup at a time, beating after each addition on a low speed. Alternately add shortening and remainder of sugar. Add salt and flavorings; beat at low speed until smooth.

Ingredients

3lb fondant rolled icing colored black

1lb fondant rolled icing colored white

Small amount of decorators icing

To make the cake cut out a cardboard template of the shape of the guitar. Make the cake as a rectangle and cut and shape to the template. Cover with apricot preserve and then roll our some almond paste and cover the cake. Roll out some fondant icing and color it black roll over and shape to the bottom of the guitar, the top and the sides.

Color the strip brown to go underneath where the strings go. Make a small amount of decorator’s icing and color it gray, to make the buttons to which the strings are attached. Cut out and roll up small pieces and attach between the buttons. Make the gray plate that holds the strings at the bottom of the cake. Make the piece that attaches the strings separately by rolling up the icing. Roll out other long gray strips and attach as strings to the bottom of the cake.

Cover with the string holder. Use thin snow-white butter cream and a straight small tip to pipe the strings from the top of the guitar to the bottom along the part of the cake, which is brown. Add the dots. Cut out and roll the other circular shapes on the cake and attach with a little royal icing or egg yolk. Pipe some musical notes onto the cake board and write the message.
